
This cobbler is so easy to make and it’s a huge crowd pleaser!
Ingredients
- 3 cups Blueberries (frozen or fresh)
- 3 cups sliced Peaches (I used yellow canned peaches)
- 3 tbsp. Cornstarch
- 1 tbsp. Lemon Juice
- 2 cups All-Purpose Flour
- 1 tsp. Baking Powder
- 1 tsp. Salt
- 2 tbsp. Honey (optional)
- 1 cup butter softened to room temp
- 1 ½ cups Light Brown Sugar (packed)
- 3 tsp. Vanilla Extract
Instructions
- Preheat oven to 375F.
- Lightly grease a 9×14 baking dish.
- In a large bowl add the blueberries and (drained) peaches. I cut the peaches slices into mid-sized chunks but that was a preference.
- Drizzle the fruit with lemon juice and stir to combine (stir gently so you don’t smash the blueberries).
- Add the cornstarch to the fruit and stir to combine.
- I added honey to the fruit because the peaches weren’t very sweet but this is optional.
- Let the fruit marinate for 20 minutes.
- In a separate large bowl whisk together the flour, baking powder, and salt. Set to the side.
- In the bowl of a stand mixer, beat the butter, brown sugar, and vanilla until well blended.
- Slowly add in the ingredients until the mixture is well combined but crumbly. Just don’t mix so long that it looks like cookie dough.
- Pour your fruit mixture into the baking dish.
- Drop the dough evenly on top of the fruit.
- Bake for 23-28 minutes or until lightly golden on top.
- Serve as is or with a scoop of vanilla ice cream on top.
