This cobbler is so easy to make and it’s a huge crowd pleaser!

Ingredients

  • 3 cups Blueberries (frozen or fresh)
  • 3 cups sliced Peaches (I used yellow canned peaches)
  • 3 tbsp. Cornstarch
  • 1 tbsp. Lemon Juice
  • 2 cups All-Purpose Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Salt
  • 2 tbsp. Honey (optional)
  • 1 cup butter softened to room temp
  • 1 ½ cups Light Brown Sugar (packed)
  • 3 tsp. Vanilla Extract

Instructions

  1. Preheat oven to 375F.
  2. Lightly grease a 9×14 baking dish.
  3. In a large bowl add the blueberries and (drained) peaches. I cut the peaches slices into mid-sized chunks but that was a preference.
  4. Drizzle the fruit with lemon juice and stir to combine (stir gently so you don’t smash the blueberries).
  5. Add the cornstarch to the fruit and stir to combine.
  6. I added honey to the fruit because the peaches weren’t very sweet but this is optional.
  7. Let the fruit marinate for 20 minutes.
  8. In a separate large bowl whisk together the flour, baking powder, and salt. Set to the side.
  9. In the bowl of a stand mixer, beat the butter, brown sugar, and vanilla until well blended.
  10. Slowly add in the ingredients until the mixture is well combined but crumbly. Just don’t mix so long that it looks like cookie dough.
  11. Pour your fruit mixture into the baking dish.
  12. Drop the dough evenly on top of the fruit.
  13. Bake for 23-28 minutes or until lightly golden on top.
  14. Serve as is or with a scoop of vanilla ice cream on top.
